Ingredients
- 1 1/2 cups brown lentils
- 1 large white onion
- 2 cloves garlic
- 1 jalapeño
- 2 cans fire-roasted tomatoes
- Corn or flour tortillas
- Lime juice
Instructions
- In a saucepan, combine lentils, vegetable broth, diced onion, garlic, jalapeño, and tomatoes. Bring to a boil and simmer for about 20 minutes until the lentils are tender.
- Stir in taco seasoning and lime juice; cook for another 5 minutes.
- Warm tortillas in a skillet. Spoon filling onto each tortilla and roll tightly.
- Air fry at 380°F for 10–12 minutes or bake at 400°F for 15–20 minutes until crispy.
