Ingredients

  • 1 1/2 cups brown lentils
  • 1 large white onion
  • 2 cloves garlic
  • 1 jalapeño
  • 2 cans fire-roasted tomatoes
  • Corn or flour tortillas
  • Lime juice

Instructions

  1. In a saucepan, combine lentils, vegetable broth, diced onion, garlic, jalapeño, and tomatoes. Bring to a boil and simmer for about 20 minutes until the lentils are tender.
  2. Stir in taco seasoning and lime juice; cook for another 5 minutes.
  3. Warm tortillas in a skillet. Spoon filling onto each tortilla and roll tightly.
  4. Air fry at 380°F for 10–12 minutes or bake at 400°F for 15–20 minutes until crispy.
