- 210g self-raising flour
- 50g cocoa powder
- 100g caster sugar
- 60ml sunflower oil
- 210g dairy-free block butter (for frosting)
- 200g icing sugar
- Aquafaba from 1 can of chickpeas
Instructions
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine dairy-free milk and apple cider vinegar; let sit for 5 minutes.
- In another bowl, whisk together self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda.
- Pour the milk mixture and sunflower oil into the dry ingredients; mix gently until just combined.
- Line a muffin tin with cupcake liners and fill each about two-thirds full with batter.
- Bake for approximately 20 minutes or until a toothpick comes out clean.
- For frosting, beat together dairy-free butter, icing sugar, and aquafaba until light and fluffy.
