  • 1/2 cup unsalted butter (melted)
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract (optional)
  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips (for topping)
  • 2 teaspoons coconut oil (for topping)
  • 1/3 cup crushed peppermint candies

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 baking pan with aluminum foil and spray lightly with cooking oil.
  2. In a mixing bowl, whisk together eggs, melted butter, brown sugar, white sugar, vanilla extract, and optional peppermint extract until well blended.
  3. In another bowl, combine flour, cocoa powder, and salt; mix well. Gradually add this to the wet mixture using a spatula until just combined.
  4. Fold in the semi-sweet chocolate chips gently.
  5. Pour the batter into the prepared pan and spread evenly. Bake for 25-28 minutes or until a toothpick inserted comes out fudgy but not wet.
  6. Allow brownies to cool completely before preparing the topping. Melt white chocolate chips with coconut oil in intervals in the microwave until smooth.
  7. Spread melted white chocolate over cooled brownies and sprinkle with crushed peppermint candies. Refrigerate until set.
