- 2 cups mushrooms (cut in half)
- 1 clove garlic (minced)
- 3 sprigs thyme
- 1 ½ cups dry white wine
- ½ cup heavy cream
- ⅓ cup shredded asiago cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- Seasoned flour for dredging
Instructions
- Pound the chicken breast to about ¼-inch thickness between wax paper, then cut into serving pieces.
- In a skillet, heat butter and olive oil over medium heat. Dredge chicken in seasoned flour and sauté until golden brown, about 5 minutes per side. Remove from skillet.
- In the same skillet, add mushrooms and garlic; sauté until browned.
- Deglaze with white wine, scraping up any browned bits from the pan. Add thyme.
- Return chicken to the skillet, bring to a boil, then reduce heat and simmer for 15-20 minutes.
