- 3 cups cooked rice (preferably day-old)
- 1 cup mixed vegetables (bell peppers, peas, carrots)
- 2 large eggs
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- Salt and pepper to taste
- 2 tbsp cooking oil (for sautéing)
Instructions
- Cut the chicken into bite-sized pieces and mince the garlic. Chop the vegetables.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden brown (5-7 minutes). Remove from pan.
- In the same skillet, add another tablespoon of oil and sauté minced garlic for about 1 minute until fragrant. Add chopped vegetables and stir-fry until tender-crisp.
- Stir in cooked rice, breaking up any clumps while mixing for about 2 minutes.
- Return chicken to the skillet along with beaten eggs. Stir until eggs are set.
