  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup chopped red onion
  • 1/4 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1/4 cup water
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut chicken into bite-sized pieces and season with olive oil and spices.
  3. Bake on a parchment-lined baking sheet for 20–25 minutes until golden brown.
  4. Cook quinoa according to package instructions and fluff when ready.
