  • 12 Lotus Biscoff biscuits
  • 150 g dark chocolate (melted)
  • 175 g unsalted butter (softened)
  • 175 g caster sugar
  • 3 large eggs
  • 150 g self-raising flour
  • 25 g cocoa powder
  • 115 g full-fat cream cheese
  • 165 g icing sugar
  • 1/8 tsp vanilla extract
  • 1–2 tsp milk
  • Green food coloring

Instructions

  1. Preheat your oven to 140C Fan/160C/325F/Gas Mark 3. Line a cupcake tin with cases.
  2. Prepare biscuit graves by dipping broken Biscoff biscuits in melted dark chocolate. Allow to set.
  3. In a bowl, mix softened butter and caster sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Gently fold in flour and cocoa powder until combined.
  5. Fill the cupcake cases evenly with batter and bake for 25-30 minutes until cooked through.
  6. Make the Oreo cheesecake filling by mixing cream cheese, icing sugar, and crushed Oreos until smooth.
  7. Core the cooled cupcakes and fill with the cheesecake mixture.
  8. Top each cupcake with chocolate buttercream and decorate with biscuit gravestones and green grass buttercream.
