  • 4 ripe nectarines
  • 8 ounces burrata cheese
  • 8 slices prosciutto
  • 4 ounces cherry tomatoes
  • 2 heirloom tomatoes
  • 1/2 cup fresh cherries
  • 1/2 cup mixed baby greens
  • Olive oil for grilling

Instructions

  1. Preheat the grill or grill pan over medium-high heat.
  2. Slice nectarines into eighths and brush lightly with olive oil.
  3. Grill the nectarines for about 2–3 minutes per side until they have nice grill marks; let cool.
  4. In a small bowl, whisk together lemon juice, vinegar, zest, minced herbs, olive oil, salt, and pepper for the vinaigrette.
  5. In a large bowl, combine mixed greens, cherry tomatoes, heirloom tomato slices, cherries, and vinaigrette; toss to coat.
  6. Top with torn burrata and prosciutto; garnish with herbs and serve immediately.
