  • 1/3 cup turbinado or granulated sugar
  • 6 tablespoons unsalted butter (softened to room temperature)
  • 23 cups icing sugar (sifted)
  • 34 tablespoons eggnog
  • 1/4 teaspoon rum extract (optional)

Instructions

  1. In a bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.
  2. In another bowl, beat softened butter and brown sugar until smooth. Add egg, yolk, vanilla, and molasses; mix well.
  3. Gradually incorporate the dry ingredients until combined. Chill the dough for 30 minutes.
  4. Preheat oven to 350°F (175°C). Scoop dough into balls, roll in sugar, and place on lined baking sheets.
  5. Bake for 8–10 minutes until just set; cool before frosting.
  6. For the frosting, beat butter and icing sugar until fluffy. Add eggnog gradually until desired consistency is reached.
  7. Assemble cookies by spreading frosting between two cookies.
