- 1/3 cup molasses (not blackstrap)
- 1/3 cup turbinado or granulated sugar
- 6 tablespoons unsalted butter (softened to room temperature)
- 2–3 cups icing sugar (sifted)
- 3–4 tablespoons eggnog
- 1/4 teaspoon rum extract (optional)
Instructions
- In a bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.
- In another bowl, beat softened butter and brown sugar until smooth. Add egg, yolk, vanilla, and molasses; mix well.
- Gradually incorporate the dry ingredients until combined. Chill the dough for 30 minutes.
- Preheat oven to 350°F (175°C). Scoop dough into balls, roll in sugar, and place on lined baking sheets.
- Bake for 8–10 minutes until just set; cool before frosting.
- For the frosting, beat butter and icing sugar until fluffy. Add eggnog gradually until desired consistency is reached.
