Ingredients
- 1 cup split yellow lentils (Toor Dal)
- 2 cups fresh spinach
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 tsp cumin seeds
- ½ tsp turmeric powder
- 1 tsp coriander powder
- Salt and pepper to taste
Instructions
- Rinse lentils under running water until clear. In a pot, combine rinsed lentils with 4 cups of water. Bring to a boil over medium-high heat.
- Reduce heat to low, cover, and simmer for about 20 minutes until lentils are tender.
- In another pan, heat oil over medium heat; add cumin seeds and sauté briefly before adding chopped onion. Cook until golden brown.
- Stir in minced garlic and grated ginger; cook for another minute until fragrant.
- Add fresh spinach to the pan and cook until wilted, about 2 minutes.
- Combine cooked lentils with the spinach mixture along with turmeric, coriander powder, salt, and pepper. Simmer together for an additional 5 minutes before serving.
