Ingredients
- 3 large navel oranges
- 4 cups granulated sugar (plus extra for rolling)
- 4 cups water (plus extra for blanching)
Instructions
- Scrub oranges under running water and slice them crosswise into ⅛-inch rounds.
- Blanch slices in boiling water for 10 minutes; then transfer them to ice water using a skimmer.
- In a cleaned pot, combine 4 cups of sugar and 4 cups of water; heat until dissolved and boil.
- Drain blanched oranges and add them to the syrup; return to boil, then simmer for 45-60 minutes until translucent.
- Place slices on wire racks over cookie sheets and bake at 175°F for 30 minutes. Roll in sugar and bake again for 1-1½ hours until mostly dry.
