  • 1/2 cup water
  • 1 tbsp apple cider or white vinegar
  • 1 whole egg (whisked)
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions

  1. Begin by browning the butter over medium heat until golden brown. Let cool slightly.
  2. In a mixing bowl, combine flour and salt; add cooled butter, water, and vinegar to form dough.
  3. Divide dough into two discs, wrap in plastic wrap, and refrigerate for at least 90 minutes.
  4. Prepare the filling by gently mixing sliced peaches, strawberries, sugar, cornstarch, lemon juice, lemon zest, and salt in a bowl.
  5. Roll out one dough disc into a circle and place it in a pie dish; pour the fruit filling evenly.
  6. Roll out the second disc to cover the filling; seal edges by crimping together.
  7. Preheat oven to 375°F (190°C). Brush top crust with whisked egg and sprinkle with Turbinado sugar if desired.
  8. Bake for about 70 minutes or until golden brown; allow cooling for at least an hour before serving.
