  • 150 g unsalted butter
  • 150 g caster sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 85 ml buttermilk
  • 165 g self-raising flour
  • 1 ½ tbsp cocoa powder
  • 1 tsp red food coloring
  • 200 g strawberry or raspberry jam
  • 200 g unsalted butter (for buttercream)
  • 400 g icing sugar
  • 1 tsp vanilla extract (for buttercream)
  • 2 tbsp milk
  • pink food coloring

Instructions

  1. Preheat your oven to 160C (fan) or 180C (conventional).
  2. Line a cupcake tin with black cases.
  3. Cream together softened butter and sugar until fluffy.
  4. Add eggs and vanilla; mix well.
  5. Combine dry ingredients with buttermilk and red food coloring; stir.
  6. Fill each cupcake case with batter evenly.
  7. Bake for 20-25 minutes until a skewer comes out clean.
  8. Let cool completely before coring and filling with jam.
  9. Prepare buttercream by mixing softened butter before adding icing sugar, milk, and pink food coloring; pipe onto cooled cupcakes.
