  • 200g udon noodles
  • 100g shrimp (810 pieces)
  • 1 garlic clove (minced)
  • 1 yellow onion (sliced)
  • 120g white mushrooms (sliced)
  • 1 carrot (cut into matchsticks)
  • Spring onion (green & white parts chopped)
  • 2 tbsp neutral oil
  • 1 tbsp regular soy sauce
  • Pinch salt and pepper
  • 1 tbsp oyster sauce
  • 1 tsp dark soy sauce (NOT regular one)
  • 1 tsp rice vinegar
  • 1 tsp brown sugar
  • 1/3 tsp freshly crushed black pepper
  • 2 tsp toasted sesame oil

Instructions

  1. Cook udon noodles according to package instructions; drain and rinse with cold water.
  2. Heat oil in a frying pan or wok over high heat. Sauté minced garlic until fragrant.
  3. Add sliced mushrooms and stir-fry until cooked through; then add onions and carrots for 2-3 more minutes.
  4. Remove veggies from the pan; add more oil and cook shrimp until pink and opaque.
  5. Toss in the cooked udon noodles and pour over the sauce mixture; stir to coat evenly.
  6. Combine with cooked vegetables; sprinkle green spring onion on top before serving.
