  • 1 tbsp olive oil
  • 1.52 lbs ground chuck
  • 1 onion (chopped)
  • 4 tbsp taco seasoning
  • 1 heaping tbsp minced garlic
  • 10 oz can Rotel diced tomatoes and green chilis
  • 10 oz can Rotel diced tomatoes with lime juice and cilantro
  • 4 oz shredded colby jack cheese
  • 8.5 oz box corn muffin mix
  • 2 eggs
  • ¼ cup sour cream
  • 15.25 oz can kernel corn (drained)
  • 4 oz can mild diced green chilis
  • 2 cups shredded cheddar cheese

Instructions

  1. In a cast iron skillet or pan, heat the olive oil over medium to medium-high heat.
  2. Add the ground chuck and chopped onion.
  3. Use a meat masher or spoon to break up the meat as it cooks until browned.
  4. Stir in taco seasoning and minced garlic; sauté for a few more minutes.
  5. Pour in both cans of Rotel tomatoes; stir well and cook until half the juice evaporates (about 5-7 minutes).
  6. Mix in colby jack cheese until melted.
  7. In a large measuring cup or bowl, combine corn muffin mix, eggs, and sour cream.
  8. Mix until well combined.
  9. Fold in drained kernel corn until fully incorporated.
  10. Transfer the ground beef mixture into a baking dish.
  11. Dollop mild diced green chilis over the beef mixture evenly.
  12. Sprinkle shredded cheddar cheese over the top of the chilis.
  13. Add dollops of corn muffin mixture across the surface to cover entirely.
  14. Preheat your oven to 350°F (175°C).
  15. Bake for about 55 minutes to an hour until the top is golden brown and cornbread is set.
  16. Allow cooling for approximately 15 minutes before serving.
