Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup coconut milk (optional)

Instructions

  1. In a large pot over medium heat, add olive oil and sauté onion, carrots, and celery until softened (about 5-7 minutes).
  2. Stir in minced garlic and cook for another minute.
  3. Add wild rice, pumpkin puree, vegetable broth, thyme, and sage. Bring to a boil.
  4. Reduce heat to low, cover pot, and simmer for about 45 minutes or until wild rice is tender.
  5. For creaminess, stir in coconut milk if desired. Season to taste with salt and pepper.
