  • 1 oz dried mushrooms (or 10 oz fresh sliced mushrooms)
  • 1 tbsp oil
  • 1/2 large onion (diced)
  • 2 small/medium carrots (chopped)
  • 3 garlic cloves (minced)
  • 3/4 tbsp fresh thyme (or 1 tsp dried thyme)
  • 1/3 cup red wine
  • 3/4 cup vegetable broth
  • 4 medium-sized potatoes
  • 1/4 cup coconut milk (canned)

Instructions

  1. Soak dried mushrooms in warm water for 15–20 minutes. If using fresh, skip this step.
  2. Peel and chop potatoes, boil in salted water until tender (about 15 minutes). Drain and mash with coconut milk, nutmeg, black pepper, and salt.
  3. In a frying pan, heat oil over medium heat. Sauté diced onion for 4–5 minutes until soft.
  4. Add drained mushrooms, chopped carrots, minced garlic, thyme, onion powder, sea salt, black pepper, and paprika; sauté for another minute.
  5. Pour in red wine and simmer for two minutes before adding tamari and vegetable broth.
  6. Cover and simmer on low-medium heat for about 10–12 minutes until carrots are tender.
  7. Whisk together plant-based milk and cornstarch; add to the pan while stirring until the sauce thickens.
