  • 1 teaspoon vanilla bean paste

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, cream butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in buttermilk and vanilla extract.
  3. In another bowl, whisk flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
  4. Divide batter among cupcake liners, filling halfway.
  5. For the cheesecake filling, blend cream cheese with sugar until smooth; add egg, flour, and vanilla bean paste and mix well.
  6. Spoon the cheesecake mixture on top of the batter in each liner.
  7. Bake for 25–30 minutes or until a toothpick comes out clean. Cool in the tin for 10 minutes before transferring to a wire rack.
