Ingredients
- 4 pieces salmon fillet
- 1 tbsp butter
- 1 tbsp olive oil
- salt and pepper
- 2 cloves garlic
- 3–4 sun-dried tomatoes (packed in oil, sliced)
- 125ml/1/2 cup dry white wine
- 250ml/1 cup double/heavy cream
- 50g/1/2 cup Parmesan cheese
- 30g/1 cup fresh spinach
Instructions
- Pat the salmon dry and season with salt and pepper. Heat olive oil and butter in a non-stick frying pan over medium-high heat.
- Sear the salmon skin-side up for 6-7 minutes until golden brown, then set aside.
- In the same pan, sauté minced garlic and sun-dried tomatoes for 30 seconds. Deglaze with white wine and simmer until reduced by half.
- Stir in heavy cream and grated Parmesan until smooth; add fresh spinach.
- Return the salmon to the pan and simmer everything together for another 5 minutes before serving.
