  • 2 (5 oz) cans of tuna, drained
  • 1 medium onion, chopped
  • 1/2 stalk celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon parsley, chopped
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil
  • 1/3 cup shredded mozzarella cheese
  • Sliced bread
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine drained tuna with chopped onion, celery, parsley, minced garlic, mayonnaise, olive oil, mozzarella cheese, salt, and pepper. Mix until well combined.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon olive oil.
  3. Butter one side of a slice of bread and place it in the skillet.
  4. Spoon about 2 tablespoons of the tuna mixture onto the bread. Butter another slice of bread on one side and place it on top of the mixture.
  5. Cook until the bottom slice is golden brown; carefully flip and cook until both sides are toasted.
