Ingredients
- 2 whole chickens (3 lbs each)
- 8 guajillo chiles
- 8 pasilla chiles
- 8 ancho chiles
- 1 roma tomato
- 1 tomatillo
- ¼ cup raisins
- 4 tablespoons sesame seeds
- 1 tablet Mexican chocolate (3.2 oz)
- Salt and pepper to taste
Instructions
- Season chicken pieces with salt and pepper. In a large pot, cover with water, add celery, onion, cilantro, and garlic. Simmer until chicken is cooked through.
- Lightly toast guajillo, pasilla, and ancho chiles in a pan until fragrant.
- Blend toasted chiles with onion, tomato, tomatillo, raisins, sesame seeds, garlic, peppercorns, cloves, bolillo bread or tortilla and Ritz crackers using some chicken broth for smoother consistency.
- Heat vegetable oil in a separate pot; cook blended mole sauce for about 10 minutes.
- Add cooked chicken pieces to the mole sauce; simmer on low heat for an additional 30 minutes.
- Stir in melted Mexican chocolate before serving.
