  • 2 whole chickens (3 lbs each)
  • 8 guajillo chiles
  • 8 pasilla chiles
  • 8 ancho chiles
  • 1 roma tomato
  • 1 tomatillo
  • ¼ cup raisins
  • 4 tablespoons sesame seeds
  • 1 tablet Mexican chocolate (3.2 oz)
  • Salt and pepper to taste

Instructions

  1. Season chicken pieces with salt and pepper. In a large pot, cover with water, add celery, onion, cilantro, and garlic. Simmer until chicken is cooked through.
  2. Lightly toast guajillo, pasilla, and ancho chiles in a pan until fragrant.
  3. Blend toasted chiles with onion, tomato, tomatillo, raisins, sesame seeds, garlic, peppercorns, cloves, bolillo bread or tortilla and Ritz crackers using some chicken broth for smoother consistency.
  4. Heat vegetable oil in a separate pot; cook blended mole sauce for about 10 minutes.
  5. Add cooked chicken pieces to the mole sauce; simmer on low heat for an additional 30 minutes.
  6. Stir in melted Mexican chocolate before serving.
