  • 2 carrots, cut into bite-size pieces
  • 2 medium potatoes, diced
  • 1/2 yellow onion, diced
  • 2 chicken breasts, cubed
  • 2 tablespoons olive oil
  • 2 teaspoons ground ginger
  • 2 teaspoons minced garlic
  • 4 oz jar red curry paste
  • 2 cans coconut milk
  • 1/4 cup + 2 tablespoons peanut butter
  • 5 tablespoons brown sugar
  • 4 teaspoons soy sauce
  • Juice of 1 lime

Instructions

  1. In a large skillet or pot, heat oil over medium-high heat. Add onions, carrots, and potatoes; sauté for about 4–5 minutes until softened.
  2. Add cubed chicken along with ginger, garlic, and red curry paste; mix well and sauté for another couple of minutes until chicken is lightly browned.
  3. Stir in coconut milk and reduce heat to medium-low; simmer for about 10 minutes until vegetables are tender.
  4. Mix in peanut butter, brown sugar, soy sauce, and lime juice; cook for an additional 4–5 minutes until all flavors meld together.
  5. Serve over rice of your choice and garnish with chopped peanuts if desired.
