  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated

  • 2 stalks lemongrass, trimmed and smashed
  • 1 can (14 oz) coconut milk
  • 1 tablespoon fish sauce
  • Juice of 1 lime
  • 2 lbs fresh mussels, scrubbed and debearded
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. Clean the mussels thoroughly under cold water and discard any open ones.
  2. In a large pot over medium heat, sauté garlic, ginger, chili, and lemongrass in oil until fragrant.
  3. Pour in coconut milk, fish sauce, and lime juice; bring to a gentle simmer.
  4. Add cleaned mussels, cover the pot, and steam for 5–7 minutes until opened. Discard any that remain closed.
  5. Remove from heat, sprinkle with cilantro, and serve immediately with lime wedges.
