  • 1 cup uncooked white rice
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans (drained)
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • Toppings: shredded cheddar cheese, salsa, olive oil, salt, pepper

Instructions

  1. Rinse the rice under cold water. In a medium pot, combine with 2 cups of water or chicken broth. Bring to a boil, reduce heat, cover, and cook for 18–20 minutes until liquid is absorbed.
  2. While the rice cooks, heat olive oil in a skillet over medium heat. Add ground meat; cook until browned (5–7 minutes). Drain excess fat.
  3. Stir in taco seasoning and about ¼ cup water; let simmer on low heat for an additional 5 minutes.
  4. Fluff the cooked rice with a fork. In serving bowls, layer rice at the bottom followed by seasoned meat and toppings: black beans, corn, diced tomatoes, shredded lettuce, and cheese.
  5. Finish with salsa on top and garnish if desired.
