Instructions

  1. Boil sweet potatoes until soft (10–12 minutes), then mash until smooth.
  2. In a bowl, mix cornmeal, flour, sugar, baking powder, salt, garlic powder, and black pepper.
  3. In another bowl, whisk milk and egg. Combine with mashed sweet potatoes; mix into dry ingredients until just combined.
  4. Heat oil in a deep fryer or skillet to 350°F (175°C).
  5. Drop spoonfuls of batter into hot oil; fry for about 2–3 minutes per side until golden brown.
