Ingredients
- 2 bunches of kale, (leaves cut off the stem & chopped into bite-sized pieces)
- 3–4 fresh peaches, pitted & diced
- 1 cup blueberries
- ¼ cup pepitas
- 1 lemon (for massaging the kale)
- Olive oil (for massaging the kale)
- 4 lemons, juiced
- 2 Tbsp + 2 tsp honey
- ¼ cup olive oil
- Cracked black pepper, to taste
Instructions
- Preheat oven to 375°F. Spread pepitas on a baking sheet lined with parchment paper and toast for 5-6 minutes until golden.
- In a jar, whisk together lemon juice, honey, olive oil, and black pepper to create the vinaigrette; refrigerate.
- Chop kale and massage with olive oil and lemon juice in a large bowl until softened.
- Dice peaches and rinse blueberries; set aside.
- Combine kale, peaches, blueberries, and vinaigrette in the bowl and toss until well-coated.
- Serve topped with toasted pepitas for extra crunch.
