  • 8 oz baby bella mushrooms
  • 2 tbsp avocado oil
  • 4 cloves garlic
  • 1 tsp fresh thyme (or 1/4 tsp dried)
  • 1/2 tsp salt
  • 8 oz softened cream cheese
  • 1/2 cup full-fat Greek yogurt
  • 1 cup shredded parmesan cheese (divided)

Instructions

  1. Soften cream cheese by letting it sit at room temperature while you prepare other ingredients.
  2. Preheat your oven to 350°F (175°C).
  3. Remove mushroom stems and chop them finely.
  4. Mince garlic cloves.
  5. Heat avocado oil in a cast iron skillet; sauté garlic and thyme until fragrant (about 3 minutes).
  6. Add chopped mushrooms and cook until soft (approximately 7 minutes). Season with salt and let cool slightly.
  7. In a mixing bowl, combine softened cream cheese, Greek yogurt, and half of the parmesan until smooth.
  8. Fold the mushroom mixture into the cheese blend, then top with remaining parmesan.
  9. Bake in preheated oven for about 15 minutes; switch to broil for an additional 5 minutes until golden brown.
  10. Serve hot with baguette slices, crackers, or fresh veggies.
