  • ¾ tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 1.5 tbsp rice wine vinegar
  • 2 cloves garlic (crushed)
  • 2 tsp chili oil (optional)
  • 2 green onions (chopped)
  • 1 tsp sesame seeds

Instructions

  1. Slice mini cucumbers diagonally into thin pieces using chopsticks as guides for spiral cuts.
  2. Place cucumber slices in a large bowl, sprinkle with salt, and toss well. Let sit for 15 to 30 minutes to draw out excess moisture.
  3. Rinse the cucumber slices under cold water, drain well, and pat dry.
  4. In a small bowl, whisk together soy sauce, brown sugar, sesame oil, rice wine vinegar, garlic, and chili oil.
  5. Pour the dressing over the cucumbers in the large bowl and toss to coat evenly.
  6. Garnish with chopped green onions and serve chilled.
