  • 1 onion (diced)
  • 1 bell pepper (diced)
  • 4 cloves garlic (minced)
  • 3 roma tomatoes (finely diced) or 8 oz tomato sauce
  • 4 boneless skinless chicken thighs (cut into pieces)
  • 2 cups Spanish rice
  • 5 cups chicken broth
  • 1/2 lb jumbo shrimp (peeled)
  • 1/2 lb mussels (cleaned)
  • 8 oz calamari rings
  • Pinch of saffron threads
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté onion, bell pepper, and garlic until the onion is translucent.
  3. Stir in tomatoes, bay leaf, paprika, saffron, salt, and pepper; cook for 5 minutes before adding white wine.
  4. Add chicken pieces and rice; mix well.
  5. Pour in chicken broth without stirring; bring to a boil.
  6. Reduce heat to medium-low and cook uncovered for about 15 minutes.
  7. Nestle shrimp, mussels, and calamari into the mixture; sprinkle peas on top.
  8. Cook for an additional 5 minutes until most liquid is absorbed.
  9. Remove from heat, cover with a lid or foil, and let rest for 10 minutes before serving.
