  • 1 tablespoon avocado oil
  • 2 cups red cabbage
  • 2 cups green cabbage
  • 4 burrito-sized tortillas
  • 2 large avocados
  • 1 cup shredded goat cheddar cheese
  • SideDish Southwest Dressing
  • 1 ½ teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 lime (squeezed)
  • 4 tablespoons SideDish Southwest Dressing
  • Tortilla chips

Instructions

  1. In a mixing bowl, combine salt, black pepper, chili powder, garlic powder, oregano, paprika, and cumin. Rub this mixture over the chicken tenders.
  2. Heat avocado oil in a non-stick skillet over medium-high heat. Cook the seasoned chicken for about 6–7 minutes on each side until cooked through.
  3. In another bowl, mix red cabbage, green cabbage, red onion, cilantro, lime juice, and dressing.
  4. Lay out tortillas and layer with chicken tenders, veggie mixture, avocado slices, and cheese. Drizzle with more dressing and roll tightly.
  5. Serve with tortilla chips on the side.
