  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 tablespoon avocado oil
  • 2 cups shredded red cabbage
  • 2 cups shredded green cabbage
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons Southwest Dressing
  • 1 lime (squeezed)
  • 4 burrito-sized tortillas
  • 4 tablespoons Southwest Dressing
  • 2 large avocados (sliced)
  • 1 cup shredded goat cheddar cheese
  • Tortilla chips

Instructions

  1. In a mixing bowl, combine salt, chili powder, garlic powder, oregano, paprika, and cumin. Coat the chicken tenders evenly with this spice mixture.
  2. Heat avocado oil in a skillet over medium heat. Add the seasoned chicken and cook for 5–7 minutes on each side until golden brown and fully cooked.
  3. Let the chicken rest for a few minutes before slicing into thin strips.
  4. On each tortilla, layer shredded cabbages, sliced onion, cilantro, avocado slices, and top with sliced chicken. Drizzle with Southwest Dressing and lime juice before rolling tightly.
