  • ¼ cup lime juice

  • ½ tsp smoked paprika
  • ¼ tsp salt
  • 3 tbsp olive oil
  • 1 Tbsp chipotle pepper in adobo
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper
  • 1 jalapeño
  • ½ red onion, sliced
  • 3 garlic cloves, minced
  • 1 tsp olive oil
  • ¾ cup corn kernels
  • 1 cup black beans
  • ¼ cup cotija cheese
  • ⅓ cup sour cream
  • 1½ Tbsp honey
  • ½1 Tbsp chipotle peppers in adobo
  • 1 Tbsp lime juice
  • 3 Tbsp fresh cilantro, chopped
  • 12 Tbsp water
  • ¼ tsp salt

Instructions

  1. 1. Marinate chicken by combining lime juice, olive oil, chili powder, onion powder, garlic powder, smoked paprika, salt, and chipotle pepper in a bowl. Add diced chicken and let it sit for at least 15 minutes.
  2. 2. Cook rice according to package instructions.
  3. 3. Heat skillet over medium heat and cook marinated chicken for about 12–15 minutes until fully cooked.
  4. 4. In the same skillet, sauté red bell pepper and onion until tender; add minced garlic and cooked chicken to warm through.
  5. 5. Assemble wraps by layering rice, chicken mixture, black beans, corn, cotija cheese, and drizzle sauce over the top.
  6. 6. Roll tortillas tightly and serve warm.
