Ingredients
- 2 ½ – 3 lb. boneless pork shoulder
- 1 ½ cups BBQ sauce
- ¼ cup apple cider vinegar
- 6 cups cooked rice
- Coleslaw mix
- Green onions and cilantro for garnish
Instructions
- Place sliced onion in the bottom of the slow cooker.
- Add pork shoulder on top of onions, sprinkle garlic, then pour BBQ sauce and apple cider vinegar around it.
- Cover and cook on LOW for 8-10 hours until tender.
- Shred pork using forks right in the slow cooker; adjust seasoning if needed.
- Prepare slaw by mixing coleslaw mix, green onions, cilantro, lime juice, oils, honey, cumin, salt, and optional spices in a bowl.
- Serve by layering rice, shredded pork, slaw in each bowl; drizzle additional BBQ sauce if desired.
