Ingredients

  • 2 ½3 lb. boneless pork shoulder
  • 1 ½ cups BBQ sauce
  • ¼ cup apple cider vinegar
  • 6 cups cooked rice
  • Coleslaw mix
  • Green onions and cilantro for garnish

Instructions

  1. Place sliced onion in the bottom of the slow cooker.
  2. Add pork shoulder on top of onions, sprinkle garlic, then pour BBQ sauce and apple cider vinegar around it.
  3. Cover and cook on LOW for 8-10 hours until tender.
  4. Shred pork using forks right in the slow cooker; adjust seasoning if needed.
  5. Prepare slaw by mixing coleslaw mix, green onions, cilantro, lime juice, oils, honey, cumin, salt, and optional spices in a bowl.
  6. Serve by layering rice, shredded pork, slaw in each bowl; drizzle additional BBQ sauce if desired.
