  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 16 ounces baby bella mushrooms (sliced and chopped)
  • 1 cup dry white wine
  • 3 tablespoons all-purpose flour
  • 1 cup Greek yogurt
  • 3 cups chicken broth (or vegetable stock)
  • Salt and pepper to taste
  • 2 teaspoons dried sage
  • 1 teaspoon fresh rosemary (chopped or 1/4 tsp dried)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until softened (2-3 minutes), then add minced garlic and cook for another 1-2 minutes.
  2. Add sliced and chopped mushrooms along with salt, pepper, sage, and rosemary. Cook until mushrooms are tender (about 2-3 minutes).
  3. In a small bowl, whisk together flour and white wine until smooth. Stir this mixture into the pot and cook for an additional 3-4 minutes.
  4. In a medium bowl, whisk together Greek yogurt with 1 cup of chicken stock until smooth. Add this mixture along with the remaining chicken stock to the pot.
  5. Bring to a boil, then reduce heat to simmer for at least 30 minutes while stirring occasionally.
  6. Serve warm, garnished with fresh parsley if desired.
