  • 2 cups lacinato kale (thinly sliced)
  • 1 cup sliced red onion
  • 1/2 cup shelled pistachios
  • 1/3 cup dried cranberries
  • 2 tablespoons dijon mustard
  • Juice and zest of 1 lemon
  • 1 tablespoon maple syrup or honey
  • 1/2 cup olive oil
  • 1/4 cup grated parmesan cheese

Instructions

  1. In a large mixing bowl, combine the thinly sliced Brussels sprouts, kale, red onion, pistachios, and dried cranberries.
  2. In a medium bowl, whisk together dijon mustard, lemon juice and zest, maple syrup or honey, salt, and pepper. Gradually add olive oil while whisking until smooth.
  3. Pour the dressing over the salad mixture and toss until well-coated.
