  • 1 pound shrimp (peeled and deveined)
  • 1 lemon (quartered)
  • 1 cup celery (finely diced)
  • 1/2 red onion (finely minced)
  • 2 teaspoons lemon juice
  • 2 cloves garlic (minced)
  • 1/2 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1.5 tablespoons fresh dill (chopped)
  • Salt and pepper to taste

Instructions

  1. Boil water in a medium pot with salted water and add quartered lemon.
  2. Add shrimp to boiling water; cook for 2-3 minutes until pink and opaque.
  3. Drain shrimp and place them in ice water to stop cooking.
  4. In a small bowl, mix mayonnaise, Dijon mustard, lemon juice, garlic, dill, salt, and pepper.
  5. In a salad bowl, combine shrimp with celery and red onion; pour dressing over the top and toss gently.
