  • 1 pound shrimp (peeled and deveined)
  • 1 lemon (quartered)
  • 1 cup celery (finely diced)
  • 1/2 red onion (finely minced)
  • 2 teaspoons lemon juice
  • 2 cloves garlic (minced)
  • 1/2 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1.5 tablespoons fresh dill (chopped)
  • Salt and pepper to taste

Instructions

  1. In a medium pot, boil salted water with quartered lemon. Prepare ice water in a large bowl.
  2. Cook shrimp in boiling water for 2–3 minutes until pink and opaque. Drain and transfer to ice water to cool.
  3. Mix mayonnaise, Dijon mustard, lemon juice, minced garlic, and chopped dill in a small bowl for the dressing.
  4. In a large bowl, combine cooled shrimp with diced celery and minced red onion. Add the dressing and toss gently to coat.
  5. Season with salt and pepper. Chill in the refrigerator for at least two hours before serving.
