Ingredients
- 1 pound shrimp (peeled and deveined)
- 1 lemon (quartered)
- 1 cup celery (finely diced)
- 1/2 red onion (finely minced)
- 2 teaspoons lemon juice
- 2 cloves garlic (minced)
- 1/2 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1.5 tablespoons fresh dill (chopped)
- Salt and pepper to taste
Instructions
- In a medium pot, boil salted water with quartered lemon. Prepare ice water in a large bowl.
- Cook shrimp in boiling water for 2–3 minutes until pink and opaque. Drain and transfer to ice water to cool.
- Mix mayonnaise, Dijon mustard, lemon juice, minced garlic, and chopped dill in a small bowl for the dressing.
- In a large bowl, combine cooled shrimp with diced celery and minced red onion. Add the dressing and toss gently to coat.
- Season with salt and pepper. Chill in the refrigerator for at least two hours before serving.
