  • 1 onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1/2 to 1 lb. fresh squid (sliced)
  • 12 oz fresh shrimp (peeled and deveined)
  • ½ pound mussels (cleaned)
  • 2 cups fresh tomato (chopped)
  • 2 tablespoons tomato paste
  • 3 to 4 teaspoons smoked paprika
  • A pinch of saffron threads
  • 2 cups Spanish paella rice
  • 4 to 5 cups chicken or seafood stock
  • 1 cup dry white wine

Instructions

  1. Heat olive oil in a large paella pan over medium heat. Sauté the chopped onion until soft.
  2. Stir in minced garlic and cook for about 30 seconds until fragrant.
  3. Add squid rings; sauté for about 2 minutes until opaque. Move to one side.
  4. Incorporate chopped tomatoes, tomato paste, salt, pepper, smoked paprika, and saffron; simmer for about 5 minutes.
  5. Stir in paella rice evenly and pour in the stock and wine; bring to a boil.
  6. Add shrimp and mussels once boiling; cover with a lid or foil and cook for about 20 minutes without stirring.
  7. After cooking, check if liquid is absorbed; let rest covered for another 5 minutes before serving.
