- 1/2 to 1 lb. fresh squid (sliced)
- 12 oz fresh shrimp (peeled and deveined)
- ½ pound mussels (cleaned)
- 2 cups fresh tomato (chopped)
- 2 tablespoons tomato paste
- 3 to 4 teaspoons smoked paprika
- A pinch of saffron threads
- 2 cups Spanish paella rice
- 4 to 5 cups chicken or seafood stock
- 1 cup dry white wine
Instructions
- Heat olive oil in a large paella pan over medium heat. Sauté the chopped onion until soft.
- Stir in minced garlic and cook for about 30 seconds until fragrant.
- Add squid rings; sauté for about 2 minutes until opaque. Move to one side.
- Incorporate chopped tomatoes, tomato paste, salt, pepper, smoked paprika, and saffron; simmer for about 5 minutes.
- Stir in paella rice evenly and pour in the stock and wine; bring to a boil.
- Add shrimp and mussels once boiling; cover with a lid or foil and cook for about 20 minutes without stirring.
- After cooking, check if liquid is absorbed; let rest covered for another 5 minutes before serving.
