Ingredients

Scale
  • 1 small head green cabbage (about 2 1/2 pounds)
  • 2 tablespoons extra virgin olive oil
  • 1 small onion (sliced)
  • 6 cloves garlic (minced)
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon dried Italian herbs
  • 1 tablespoon chopped fresh oregano
  • Juice from 1 lemon wedge
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Cut the cabbage in half through its core; discard the core and slice each half into thin ribbons.
  2. Heat a large sauté pan over medium-high heat, then add olive oil.
  3. Add sliced onions to the pan and sauté for about 1-2 minutes until they begin to soften.
  4. Mix in the sliced cabbage, minced garlic, kosher salt, black pepper, dried herbs, and chopped oregano. Sauté for 10 to 15 minutes until tender and slightly browned.
  5. Remove from heat; adjust seasoning if necessary and finish with a squeeze of lemon juice. Top with parsley before serving.
