  • 45 Bone-In Chicken Thighs
  • 12 Honeycrisp Apples, sliced
  • 1 Red Onion, sliced
  • 4 tbsp Salted Butter
  • 3/4 cup Apple Cider
  • 1/2 cup Chicken Broth or White Wine
  • 2 tbsp Dijon Mustard
  • Fresh Rosemary and Thyme
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Fresh Thyme
  • 2 tbsps Fresh Rosemary, chopped
  • Olive oil, as needed
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Season chicken thighs with onion powder, garlic powder, smoked paprika, thyme, and rosemary.
  3. Heat olive oil in an oven-safe skillet; sear chicken thighs skin-side down until golden brown.
  4. Add sliced red onion and apples around the chicken.
  5. Bake in the oven for 20–25 minutes until chicken reaches 165°F internal temperature.
  6. Remove chicken and fruit; prepare the sauce in the skillet with butter, apple cider, broth or wine, Dijon mustard, and minced garlic. Whisk until combined.
  7. Return chicken and apples to the pan; spoon sauce over them before serving warm.
