Ingredients
- 1 pound cherry tomatoes
- 1 head garlic
- 3 tablespoons olive oil
- Salt and pepper to taste
- 1 pound pasta (spaghetti or choice)
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup fresh basil leaves, chopped
- 1/2 cup grated Parmesan cheese
- 1 tablespoon balsamic vinegar (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Rinse cherry tomatoes and place in a large bowl. Cut the top off the garlic head.
- Drizzle tomatoes with 2 tablespoons olive oil, season with salt, pepper, and red pepper flakes. Toss well.
- Line a baking sheet with parchment paper; spread tomatoes on one side and place garlic cut side up on the other. Drizzle with olive oil and salt.
- Roast for 25-30 minutes until tomatoes are blistered and garlic is soft.
- Meanwhile, boil salted water in a pot, add pasta, cooking until al dente.
- Squeeze roasted garlic into a mixing bowl; add tomatoes and their juices.
- Mash together gently until combined but chunky.
- Stir in remaining olive oil and balsamic vinegar if using; season as needed.
- Combine cooked pasta in the mixing bowl; toss everything together, adding reserved pasta water for desired consistency.
- Fold in chopped basil just before serving, top with Parmesan cheese.
