  • 9 Roma tomatoes (sliced lengthwise)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion (diced)
  • 4 garlic cloves (minced)
  • 1 tbsp fresh thyme (minced)
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • 1 can (28 oz) crushed San Marzano tomatoes
  • 1 cup fresh basil (roughly chopped)
  • 1 tbsp sugar
  • 2 cups chicken stock
  • 2/3 cup heavy cream

Instructions

  1. Preheat oven to 375°F.
  2. On a baking sheet, spread sliced Roma tomatoes, drizzle with olive oil, and season with salt and pepper. Roast for about one hour until softened and caramelized.
  3. In a large pot or Dutch oven, heat remaining olive oil or butter over medium-high heat. Sauté diced onion for five minutes until softened, then add minced garlic and thyme; cook for an additional minute.
  4. Stir in crushed San Marzano tomatoes, chopped basil, and sugar. Reduce heat and simmer for ten minutes.
  5. Add chicken stock along with roasted tomatoes; simmer for thirty minutes.
  6. Blend the soup using an immersion blender until smooth or transfer batches to a regular blender.
  7. Stir in heavy cream before serving.
