  • 3 pounds red potatoes
  • 1 tablespoon olive oil
  • 2 teaspoons paprika (divided)
  • 1 1/2 teaspoons cumin
  • 1 1/2 teaspoons garlic powder
  • 5 pieces bacon
  • 4 cups broccoli florets
  • 1 cup chopped green onions
  • 1/3 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 tablespoon nutritional yeast
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss red potatoes with olive oil, seasonings, and spread on baking sheets. Roast for 45-50 minutes until crispy.
  2. Cook bacon in a large sauté pan until crispy; remove and drain on paper towels.
  3. Sauté broccoli in the same pan until al dente.
  4. Mix mayo with lemon juice and remaining spices for dressing.
  5. Combine roasted potatoes, sautéed broccoli, crumbled bacon, and dressing in a large bowl; toss to combine.
