Ingredients
- 1 whole chicken (4–5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Zest and juice of 2 large oranges
- 1 tablespoon honey
- 1 tablespoon soy sauce
- Salt and pepper to taste
- 1 small onion, quartered
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine olive oil, garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, salt, and pepper. Rub this mixture all over the chicken.
- Place quartered onion in a roasting pan and position the seasoned chicken on top. Pour chicken broth around the chicken.
- Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C), basting occasionally with pan juices.
- Let the chicken rest for 10-15 minutes before carving.
