Description

Creamy Roasted Garlic Mashed Potatoes are a delightful twist on traditional mashed potatoes, perfect for any occasion.   • 1 head garlic
  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and quartered)
  • Kosher salt
  • 6 tablespoons butter
  • 3/4 cup half and half
  • Fresh ground pepper

Instructions

  1. Preheat your oven to 375°F. Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about an hour until soft.
  2. In a large pot, cover quartered red potatoes with cold water and add kosher salt. Bring to a boil and simmer until fork-tender, about 15 minutes.
  3. Drain the potatoes and return them to the pot with the roasted garlic cloves squeezed out of their skins.
  4. Warm the half and half and butter until melted; then add to the pot with salt and fresh ground pepper. Mash until creamy with some lumps remaining.
  5. Serve warm, garnished with fresh herbs or additional butter if desired.
