- 1 head garlic
- 1 tsp olive oil
- 2 pounds red potatoes (washed and quartered)
- Kosher salt
- 6 tablespoons butter
- 3/4 cup half and half
- Fresh ground pepper
Instructions
- Preheat your oven to 375°F. Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about an hour until soft.
- In a large pot, cover quartered red potatoes with cold water and add kosher salt. Bring to a boil and simmer until fork-tender, about 15 minutes.
- Drain the potatoes and return them to the pot with the roasted garlic cloves squeezed out of their skins.
- Warm the half and half and butter until melted; then add to the pot with salt and fresh ground pepper. Mash until creamy with some lumps remaining.
- Serve warm, garnished with fresh herbs or additional butter if desired.
