Ingredients

  • 2 heads garlic
  • ¾ lb raw sliced bacon
  • 1 bunch lacinato kale
  • 3 hearts of romaine
  • ½ cup grated parmesan cheese
  • Olive oil
  • Freshly squeezed lemon juice
  • Dijon mustard
  • Anchovy fillets

Instructions

  1. Preheat oven to 300°F. Roast garlic wrapped in foil for about 2 hours until soft.
  2. Increase heat to 425°F and roast bacon for 20-22 minutes until crispy; chop.
  3. In a food processor, blend lemon juice, mustard, anchovies, parmesan, and roasted garlic. Slowly add olive oil while blending.
  4. Slice kale into strips; massage with dressing and let sit for 10 minutes.
  5. Toast torn bread pieces in a skillet with olive oil until golden brown.
  6. Combine romaine and kale with remaining dressing, then add bacon, croutons, and more parmesan.
  7. Serve topped with shaved parmesan and black pepper.
