- 1 head of garlic
- 4 strips bacon (sliced into 1" pieces)
- 1 tbsp unsalted butter
- 1 shallot (finely diced)
- 3/4 cup chicken broth
- 1 1/2 cups heavy cream
- 16 oz package shelf-stable gnocchi
- 1/3 cup grated parmesan cheese
- 1/4 cup fresh parsley (chopped)
- Salt and black pepper to taste
Instructions
- Preheat the oven to 400°F. Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 50 minutes.
- In a large skillet, cook bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pan.
- Add butter to the skillet, then sauté shallots for about 2 minutes until softened.
- Squeeze roasted garlic into the skillet; add broth, cream, salt, and pepper. Stir and bring to a simmer.
- Add gnocchi to the sauce; cook for about 8 minutes until tender.
- Stir in chopped parsley and parmesan; top with reserved bacon before serving.
