  • 1 pound sliced corned beef
  • 14 ounces sauerkraut (drained)
  • 2 cups shredded Swiss cheese
  • 6 slices rye bread (cubed)
  • 1 cup Thousand Island dressing
  • 1 tablespoon poppy seeds (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a large baking dish.
  2. In a bowl, toss cubed rye bread with half of the shredded Swiss cheese.
  3. Layer half of the bread mixture in the baking dish, followed by half of the corned beef, all the sauerkraut, and half of the Thousand Island dressing. Repeat layers.
  4. Top with remaining corned beef and Swiss cheese; drizzle with leftover dressing and sprinkle poppy seeds on top.
