Instructions
- Prepare all ingredients by peeling and dicing the mango and cucumber, and chopping the bell pepper, onion, and cilantro.
- In a large mixing bowl, combine the diced mango, cucumber, bell pepper, onion, and cilantro.
- In a small bowl, whisk together lime juice, honey (if using), salt, black pepper, olive oil, and chili powder (for spice).
- Pour the dressing over the salad mixture and gently toss until well combined.
- Taste the salad and adjust seasonings as needed.
- Chill in the refrigerator for at least 10 minutes before serving.
