  • salt and pepper to taste

Instructions

  1. Wash and chop all fresh produce: halve the grape tomatoes, slice the cucumbers into half-moons, and finely dice the red onion.
  2. In a mixing bowl, combine salad leaves, chickpeas, grape tomatoes, cucumbers, red onion, olives, and feta cheese.
  3. In a separate bowl or jar, whisk together olive oil and lemon juice; add oregano, salt, and pepper to taste.
  4. Pour the dressing over the salad mixture and toss gently until well coated.
